Brown Butter Monte Cristo

Golden, crispy Belgian waffle Monte Cristo layered with ham, turkey, and melty Swiss, cooked in rich brown butter and finished with a dusting of powdered sugar!

WHAT DO I NEED?

  • 4 Belgian Boy’s waffles
  • 3 oz Brown Butter
  • 4 slices deli ham
  • 4 slices roasted turkey
  • 4 slices Swiss cheese
  • 2 large eggs
  • 2 tbsp milk
  • 1/2 tsp Dijon mustard (optional)
  • Pinch of salt
  • Powdered sugar, for dusting
  • Raspberry or strawberry jam, for serving
  1. Toast the waffles until golden and crisp. Set aside.
  2. In a shallow bowl, whisk together eggs, milk, Dijon (if using), and a pinch of salt.
  3. Build two sandwiches: layer Swiss, ham, turkey, and another slice of Swiss between two waffles.
  4. Heat a skillet over medium and melt 1–2 tablespoons of the Brown Butter.
  5. Lightly dip each sandwich into the egg mixture, coating both sides (don’t soak too long—just enough to coat).
  6. Transfer to the skillet and cook until golden brown and the cheese is melted, about 3–4 minutes per side. Add more brown butter as needed for extra crispiness and flavor.
  7. Remove from heat, dust generously with powdered sugar, and slice in half.
  8. Serve warm with jam on the side for dipping.
