WHAT DO I NEED?

  • 1 ½ lbs large shrimp, peeled and deveined (tails on or off)
  • ¼ cup Garlic & Shallot Butter, melted
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 lemon, half juiced and half cut into wedges
  • 2 tbsp chopped fresh parsley
  • Wooden or metal skewers
  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a large bowl, toss the shrimp with the olive oil, smoked paprika, salt, pepper, and the juice of half a lemon.
  3. Thread 4–5 shrimp onto each skewer.
  4. Preheat a grill to medium-high heat (about 400–450°F) and lightly oil the grates.
  5. Grill the shrimp for 2–3 minutes per side, brushing generously with the melted Garlic & Shallot Butter as they cook.
  6. Remove the skewers once the shrimp are pink, opaque, and lightly charred. Brush with any remaining butter.
  7. Finish with chopped parsley and serve immediately with lemon wedges.
