Grilled Italian Sausage with Giardiniera

TIME: 25 minutes // SERVES: 4 // DIFFICULTY: Easy

WHAT DO I NEED?

  • 4 Italian sausages (sweet or hot)
  • 4 brioche buns
  • 1 (12 oz) tub Garlic & Shallot Butter, softened
  • 1 cup giardiniera (store-bought or homemade), drained
  • Fresh parsley, chopped (optional)

Homemade Quick Giardiniera (Optional)

  • 1 cup chopped cauliflower
  • ½ cup diced carrots
  • ½ cup diced celery
  • ¼ cup sliced pepperoncini
  • ¼ cup chopped roasted red peppers
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  1. Preheat a grill to medium heat.
  2. Grill the Italian sausages, turning every few minutes, until browned on all sides and cooked through, about 12–15 minutes.
  3. During the last few minutes of grilling, generously spread the cut sides of the brioche buns with softened Garlic & Shallot Butter. Place butter-side down on the grill until golden and lightly toasted, about 1–2 minutes.
  4. Transfer the grilled sausages to a platter and immediately top each one with a generous spoonful of softened Garlic & Shallot Butter so it melts into every nook and cranny.
  5. Assemble by placing each sausage in a buttery toasted brioche bun. Top with plenty of giardiniera and finish with chopped parsley, if desired.
  6. Serve immediately with potato chips, grilled corn, or your favorite summer cookout sides.

For the Giardiniera

Toss everything together and let marinate for at least 30 minutes (or overnight for even more flavor).
