Grilled Corn Salad w/ Garlic & Shallot Butter

This grilled corn salad is the flavor bomb side dish you’ve been missing. Whenever you're firing up that grill, think about making this salad - it's truly a crowd pleaser. Sweet corn meets smoky char, creamy Garlic & Shallot Butter, sweet & bright tomatoes, and a pop of flavor from the onions, avocado, and cilantro. It’s fast, flexible, and wildly good with anything off the grill.

WHAT DO I NEED?

  • 4 ears of corn, husked
  • 4-5 oz of Garlic & Shallot Butter
  • 1 onion (thinly sliced)
  • 2 cups cherry tomatoes (halved)
  • 1 avocado (diced)
  • 1 lime
  • 1/2 cup chopped cilantro
  • 1/2 cup extra virgin olive oil
  • 1 tbsp of paprika, and then salt & pepper to taste
  1. Grill the Corn
    Brush our Garlic & Shallot butter all over your 4 ears of corn, wrap in foil (like a burrito, in the video), and grill on high heat for 8–10 minutes, turning occasionally.
  2. Cut the Kernels, and your veggies
    Let corn cool slightly, then slice kernels off the cob into a large bowl. Cut your onion, tomatoes, avocado, and cilantro as well, and throw into the same large bowl.
  3. Dress the Salad
    Toss altogether with your evoo, lime juice, salt, pepper, and paprika!
  4. Finish & Serve
    Serve warm, room temp, or cold — it hits every time. Also great (optional) to finish with feta or cotija cheese!
