Maple & Cinnamon Butter Berry Cobbler

This cobbler is a celebration of peak-season fruit and peak-level butter. Mix our Maple & Cinnamon Butter with a bit of flour, to create a topping that'll melt and crisp up to a golden, sugary perfection - all while the base bubbles naturally with sweetness from the berries. It’s rustic, so easy, and an absolute crowd-pleaser!

WHAT DO I NEED?

  • 4 cups fresh (or frozen, if necessary) berries - we used fresh strawberries and blackberries
  • ½ cup sugar (can use honey or maple syrup as well)
  • 1/2 cup lemon juice + lemon zest
  • 1/4 cup cornstarch
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 3 oz Maple & Cinnamon Butter (cold, from the fridge)
  • Optional: vanilla ice cream for serving!
  1. Preheat & Prep
    Preheat oven to 375°F. Lightly grease a 9x9 baking dish or deep pie dish.
  2. Mix up the "filling"
    In your baking dish, toss in your fresh cut berries with the sugar, lemon juice, cornstarch, and a touch of salt. Mix to combine
  3. Make the buttery topping
    In a separate bowl, mix cold butter and lemon zest with the flour. Mix with your hands to the point where you get little pieces of dough. It should not be totally combined like cookie dough - this is how you achieve peak flakiness!
  4. Top it up!
    Layer the topping mixture over the berry mixture
  5. Bake!
    Bake for about 30 minutes, until the top is golden and the edges are bubblin. Serve with a scoop of creamy vanilla bean ice cream!
