Grilled Corn with Miso Butter and Lemon

Grilled Corn with Miso Butter and Lemon

Corn is one of the easiest, sweetest, and most satisfying things you can make on the grill. It's so low maintenance; you can almost just throw it on and forget about it. Simply brushing with butter and salt sufficiently makes this a treat, but when you add the Churn Miso butter and lemon, the layers of savoriness and acidity match the natural sweetness of the grilled corn, making this an addicting dish.

WHAT DO I NEED?

  • Corn (de-husked, ready to go on the grill)
  • Churn Miso Butter
  • Lemon (cut in half)
  • Olive oil
  • Salt/Pepper
  • Brush (for applying butter onto corn)

1) Turn on your grill

get it churnin'. Oil it up with some spray, or brush it on with a grill brush or cheap towel.

2) Get your corn ready

Lightly brush your corn with olive oil all around, and season lightly with salt and fresh ground pepper.

3) Temp the miso butter

Make sure its soft enough to brush on the grill. Microwave it for 10-15 seconds if you're just taking it out of the fridge.

*Don't microwave the Churn butter directly in the plastic container - it's not microwave friendly. Instead, spoon some out into a ramekin or a small bowl, and microwave if need be.

4) Put your corn and lemon on the grill

Place your corn on the hottest part of your grill. Put your lemons on, seed exposed side down first. Close the lid to retain maximum heat.

5) Flip your corn

Once you have the color you're looking for on the corn (golden, charred, however you like it), roll the corn over so that the other side reaches the heat. Now, brush the grilled side liberally with miso butter. Close lid.

6) Flip your corn

Again, once you have the right color going on the other side, roll it over so you can start brushing it with more miso butter.

When all sides are coated nicely with miso butter, squeeze on that grilled lemon for some added acidity/sweetness.
